Baked Cornbread Casserole
1 lb. extra lean ground beef or 1/2 lb extra lean ground beef and 1/2 lb ground turkey
1 c. diced celery
1/2
c. diced green pepper
1 medium onion, chopped
2 small cans tomato sauce, less 2 T.
1 small can
kernel corn, drained well
1/4 t. pepper
1 T. sugar
2 T. corn oil margarine
1 pkg.
cornbread mix
Brown ground beef, add vegetables, except corn, cook until pepper is softening. Add
seasoning, tomato sauce, corn and butter. Pour into 10-inch square baking pan, mix cornbread according to pkg directions,
then spoon over top of meat mixture. Bake at 400°F for 30 minutes or until cornbread is done. Serves 6-8.
