Cheesy Chicken & Broccoli Casserole
1 small onion, peeled & diced
1 stick of butter, melted
15 oz. jar of cheese whiz
10
oz. pkg. chopped frozen broccoli, thawed
1 can cream of celery soup
1 1/2 c. instant rice, uncooked
3/4
c. milk
2 c. cooked chopped chicken
1 c. butter-tasting crackers, crushed
2 c. grated cheddar
cheese
Place onion and butter in pan and cook until onions are tender. Add the Cheese Whiz, broccoli,
soup, rice, and milk. Stir to mix well. Place in a greased 11x7 inch baking pan. Top with chicken. Sprinkle with crackers
and top with cheese. Bake at 350°F for one hour.
Makes 6 servings.
This
is a good way to use leftover turkey in the freezer. Just thaw in the refrigerator over night and it will be ready for the
casserole the next day.
